Thai rolls with shrimp and vegetables

Perfect for an aperitif or as a starter, these Thai rolls with prawns and vegetables will surprise you with their taste and lightness.

Ingredients

  • 1 pack of Arnaboldi rice sheets
  • 200g of prawns
  • 2 courgettes
  • 1 clove of garlic
  • 4 tablespoons of seed oil
  • 2 tablespoons sesame seeds
  • valerian to taste
  • chili pepper to taste
  • ginger to taste
  • Arnaboldi soy sauce to taste

Preparation

In a bowl, add the shrimp and 4 tablespoons of seed oil, and mix well. Sauté the shrimp in the pan for a few minutes.

Meanwhile, in a bowl, combine the ginger, minced garlic, sesame seeds, and a little Arnaboldi soy sauce . Remove the shrimp from the heat and add them to the ginger, garlic, sesame seeds, and soy sauce mixture.

Place a damp cloth on your work surface. Dip the Arnaboldi rice paper in a bowl of cold water and leave it in the water for about 20 seconds—until it becomes pliable. Remove it and place it on the damp cloth.

Cut the zucchini into strips and the chili pepper into small pieces. Assemble the rolls by placing the chili pepper, zucchini, shrimp, and lamb's lettuce in the center of the rice paper. Fold in both sides and roll up, making sure your fingertips are wet when folding.

Finally, if you like, serve them with extra dipping sauce made with soy sauce and sesame seeds.
