Got some leftover Arnaboldi Sushi Rice? Turn it into delicious Tori Zōsui!
Tori zōsui is a Japanese soup made with pre-cooked rice, dashi broth, soy sauce, and chicken. Originally created to reuse leftover rice, it's now a comfort food perfect for regaining strength when you're not feeling your best.
Ingredients
- 3 cups of Arnaboldi Sushi Rice
- 4 cups dashi broth
- 400 g chicken breast
- 2 teaspoons soy sauce
- 2 eggs
- 1 spring onion
- salt and pepper
Preparation
Bring the dashi broth to a boil in a large pot.
Add the whole chicken and cook for about 20 minutes, skimming off any foam that forms on the surface.
Drain the chicken from the broth and cut it into strips.
Add the soy sauce and cooked sushi rice to the broth. Cook for 3 minutes.
Beat the eggs in a bowl.
Pour the chicken strips into the broth and then pour in the beaten eggs, stirring gently with a spoon to distribute them evenly.
Season with salt and pepper to taste.
Cook for another 2-3 minutes.
Serve the Zōsui piping hot, garnished with chopped fresh spring onion.
