Tod Man Khao Pod

These delicious, crispy corn fritters are one of Thailand's most popular street foods. The contrast between the crispy edges and the soft dough will make you fall in love with them at first bite.

Shell the corn cobs with the help of a knife.

In a large bowl, combine the rice flour, curry paste (made by mixing a little flour with Arnaboldi red curry sauce) , eggs, fish sauce, Arnaboldi soy sauce , salt, and pepper. Stir in the corn kernels, spring onions, and coriander. If the mixture is too dry, add a couple of tablespoons of water.

Heat the oil for frying in a large skillet and drop in a spoonful of batter at a time. Lightly flatten the fritters with the back of a spoon. Cook for about 3-4 minutes per side, until golden brown.

Drain the fritters on paper towels. Serve hot with Arnaboldi sweet and sour sauce .
