Ready in 30 minutes | Serves two
Today we're heading east with a delicious Chinese recipe. Soy noodles with vegetables, eggs, and surimi are easy to make at home, surprising your guests with a complete and delicious dish.
Ingredients
- 200 g of Arnaboldi soy vermicelli
- 1 courgette
- 1 carrot
- 1 egg
- 3 surimi sticks
- 3 tablespoons sunflower oil
- 4 tablespoons of Arnaboldi soy sauce
Preparation
Clean and julienne the zucchini and carrots. Cut the surimi into cubes.
Soak the Arnaboldi soy vermicelli in boiling water for 4/5 minutes.
Meanwhile, in a pan (or wok), heat the sunflower oil and scramble the egg, cooking it for a few minutes over low heat. Add the julienned zucchini and carrots, along with the surimi, and stir for 5-6 minutes.
Add the previously drained vermicelli, the soy sauce and mix everything together for 3/4 minutes over high heat.
Your soy noodles with vegetables, eggs, and surimi are ready to serve!
Chef's advice
To make the dish crispier, add a handful of cashews before stirring.
