Soy spaghetti with sweet and sour vegetables

Soy noodles with vegetables are a traditional Chinese first course. Colorful and flavorful, they're a hit with everyone. Prepare them in a sweet and sour version with this quick and easy recipe: it only takes 10 minutes and you'll be a hit.

Ingredients

  • 1 pack of Arnaboldi soybean vermicelli
  • 1 red pepper
  • 1 green pepper
  • 1/2 red onion
  • 2 teaspoons of sugar
  • apple cider vinegar for blending
  • soy sauce to taste
  • salt to taste

Preparation

First, wash and dice the peppers and slice half an onion. Pour a drizzle of extra virgin olive oil into a pan and sauté the vegetables, cooking the peppers first and then the onion. After a few minutes, add the apple cider vinegar, a pinch of salt, and two teaspoons of sugar. Once the vegetables are cooked, add two tablespoons of soy sauce and turn off the heat. It's best to keep the sauce moist, not dry.

Meanwhile, bring a pot of water to a boil; once it boils, add the Arnaboldi soy vermicelli . Turn off the heat and cover the pot with a lid. Let it sit for 4 minutes, then use a fork to separate the vermicelli. Drain the vermicelli and add it to the pan with the sweet and sour vegetables. Mix the ingredients well and serve immediately!
