Cantonese rice with confit cherry tomatoes

Cantonese rice is one of the most beloved Chinese dishes. The version we're offering is incredibly easy to make at home and is topped with delicious caramelized cherry tomatoes.

Start by preparing the confit cherry tomatoes. Wash them thoroughly and then cut them in half. Arrange them on a baking sheet lined with parchment paper, with the cut side facing up.

Season with salt and pepper to taste, add chopped garlic and oregano, sprinkle with sugar, and drizzle with extra virgin olive oil on each cherry tomato.

Bake in a static oven at 200°C for an hour, until the water from the tomatoes has evaporated and they are lightly browned, but not dry.

Move on to preparing the Arnaboldi Cantonese rice . Pour the contents of the sachet into a shallow, wide pan (about 24-26 cm in diameter) containing 500 ml of cold water and two tablespoons of extra virgin olive oil. Bring to a boil, uncovered, stirring occasionally. Once boiling, cook until the water is completely absorbed—about 5 minutes lightly toasting the rice.

Add the confit tomatoes and serve with the addition of a spoonful of Arnaboldi soy sauce .
