Noodles bowl with vegetables and peanut sauce

Ready in 20 minutes | Serves 2

A complete, fresh and easy-to-prepare dish: noodle bowl (oriental-style spaghetti bowl) with seasonal vegetables and a tasty peanut sauce.

Ingredients

    Noodles and vegetables

    Peanut sauce

    • 1 bowl of peanuts
    • 1/4 onion
    • 2 tablespoons soy sauce
    • 1 tablespoon of sugar
    • 2 tablespoons of water

    Preparation

    Take a tall, narrow container and add the peanuts, a quarter of a peeled and washed onion, two tablespoons of soy sauce, a tablespoon of sugar, and two tablespoons of water. Using an immersion blender, blend all the ingredients until smooth.

    Wash the red pepper and carrot , cut them into strips of equal size and set aside for later.

    Take the fresh corn, husk it, remove the beard, and rinse it under water. Bring a pot of water to a boil, and once it boils, add the corn to the boil for about 3-4 minutes. Then drain and let it dry for a couple of minutes on a clean cloth.

    If you can't find fresh corn on the cob, or you're short on time, you can use pre-cooked corn: just remember to rinse it well before roasting.
    Take a grill and place it on the stove. Once it reaches the right temperature, add the corn and roast it on all sides for about 10 minutes, turning it occasionally.

    Now you can cook the soy vermicelli . Bring the water to a boil in a pot. Once it boils, add the Arnaboldi soy vermicelli (tie them together with kitchen string to prevent them from falling apart during cooking). Turn off the heat and cover the pot with a lid. Let it rest for 4 minutes, then use a fork to separate the vermicelli. Drain and cool under running water .

    

    Assemble the two dishes by combining noodles and vegetables, half a corn cob for each and pour a generous portion of peanut sauce over them.

    Chef's advice

    Peanut sauce is a delicious and very versatile condiment: you can brush it on skewers before cooking them or use it to marinate all types of meat.
