Breading for fried and au gratin foods

Panko is a traditional Japanese breading, especially used in fried foods, where it adds lightness and crunch. It's very light and, thanks to its ability to trap air, allows excess oil to slide off fried meat, fish, and vegetables. Panko is also ideal for preparing gratin dishes in the oven or in the air fryer.

Soft wheat flour (gluten) , sugar, salt, yeast, corn starch, raising agent: calcium sulphate; antioxidant: ascorbic acid.
  • Sui fornelli. Coat the marinated meat, vegetables, or fish evenly with flour. Dip in the beaten egg, previously seasoned with pepper and salt. Coat the entire surface with panko, then fry until golden brown and serve hot.
