Creamy vegetable soup with seared octopus is a truly delicious appetizer or main course. Ideal for special occasions, it's a simple recipe to make, with just a few ingredients, and beautiful to look at. A guaranteed wow factor!
Ingredients
- 2 Arnaboldi instant vegetable soups
- 4 tentacles of already boiled octopus
- EVO oil to taste
- salt and pepper to taste
- parsley (for decoration)
Preparation
Start by cooking Arnaboldi instant vegetable soups In a cup. Lift part of the film and pour hot water (about 60°C) inside, up to the inner line. Stir well, close the film again, and wait two minutes.
While the vegetable soups are resting, prepare the tentacles. Pour a drizzle of oil into a pan and sauté the previously boiled octopus tentacles for a few minutes, seasoning with salt and pepper. The tentacles are ready when they form a crust on the outside.
At this point, you can plate it: pour the soup into a shallow dish and arrange the tentacles on top. Serve with a sprinkling of parsley and a drizzle of extra virgin olive oil.
