Cream of vegetables with ginger prawns

Creamy vegetable soup with ginger shrimp is a simple and delicious recipe perfect for any occasion. It's also a great appetizer for the Christmas season, and is light yet flavorful.

Ingredients

  • 2 packs of Arnaboldi Instant Vegetable Soup
  • 400g of peeled shrimp
  • 2 tablespoons of extra virgin olive oil
  • qb ginger powder
  • parsley to taste
  • to taste whole sea salt and pepper
  • croutons to taste
  • qb shallot

Preparation

Start by cooking the Arnaboldi instant vegetable soup : lift part of the plastic wrap and pour hot water (about 60°C) into the pot, until it reaches the level of the inner line. Stir well to dissolve any lumps, close the plastic wrap, and wait two minutes.

Wash the shrimp and cook them in a pan with chopped shallots, extra virgin olive oil, and ginger. Season with salt and pepper to taste.

Divide the soup among four soup plates. Finish by adding the shrimp to each serving and serve with chopped parsley and croutons.
