Vegan Valentine's Day Sushi

There's nothing more romantic than a homemade sushi roll to show your loved one how much you love them. If you're not a sushi man or girl, don't despair, because with this handy kit, it's really easy to make this unique vegan version of the classic rolls: sushi with vegan tuna, beetroot, and carrots!

Happy Valentine's Day - Arnaboldi

Ingredients

  • 1 Arnaboldi Japanese Sushi Kit
  • 120g cooked chickpeas
  • 1 small beetroot (already cooked)
  • 1 small carrot
  • 1 piece of Arnaboldi Nori Seaweed (approximately 4 cm x 3 cm)
  • 1 tablespoon of capers in vinegar
  • 1 tablespoon mayonnaise (without eggs)
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 tablespoon of extra virgin olive oil
  • a pinch of toasted sesame seeds (optional)
  • to taste of Sushi Ginger Arnaboldi
  • a pinch of salt

Preparation

Start by cooking the sushi rice: pour the contents of the packet into a saucepan with 250 ml of water. Cover, place over high heat, and bring to a boil. Then, lower the heat and cook for 15 minutes (still covered) until the water is completely absorbed. Once cooked, add a tablespoon of apple cider vinegar and a teaspoon of sugar to the rice. Mix well and let cool.

Meanwhile, prepare the vegan tuna: coarsely mash the chickpeas with a fork (it's best to do this by hand, not in a food processor, to achieve a tuna-like consistency). Add a piece of finely chopped Arnaboldi Nori seaweed , the chopped capers, the eggless mayonnaise, the lemon juice, the extra virgin olive oil, and a pinch of salt. Taste and adjust the ingredients to your taste.

Finally, cut the cooked beetroot and raw carrot into strips (if you have time, let the carrot marinate in a drizzle of soy sauce and extra virgin olive oil for about 20 minutes).

You're ready to assemble your Valentine's Day sushi: lay out a sheet of Nori seaweed on the bamboo mat, pour a couple of spoonfuls of rice on the bottom part of the seaweed, leaving about ½ cm free on the two long sides (wet your hands well so you can compact the rice).

Place the vegetable tuna, beetroot and carrots on the rice.

Then, wet the edges of the seaweed and begin rolling the bamboo mat until it closes; press it down firmly with your hands before removing it.

Then remove the mat and, with the help of a very sharp knife, cut out 5/6 bites for each roll.

Serve your Valentine's Day sushi with soy sauce (if you like, dilute the wasabi paste in it), ginger slices and toasted sesame seeds.
