Ready in 30 minutes | Serves 2
It's hard to resist these tasty chicken and vegetable skewers, served with red curry sauce. Serve with white rice for a healthy and complete meal.
Ingredients
- 1 pack of Arnaboldi Red Curry Sauce
- 1 thick slice of chicken breast (about 350 g)
- 1 red pepper and 1 yellow pepper
- 2 tablespoons of Arnaboldi soy sauce
- 1 courgette
- 1 clove of garlic
- 1/2 fresh ginger root
- 2 tablespoons of extra virgin olive oil
- 4 wooden skewers
Preparation
Cut the chicken breast into medium- sized pieces and add the grated ginger, minced garlic, Arnaboldi soy sauce , and oil. Let it simmer for 10 minutes.
Cut the peppers vertically to obtain square pieces, the courgette into thick rounds and then in half.
Prepare the skewers by threading the chicken pieces and previously chopped vegetables. Grease a baking sheet and arrange the skewers on it. Bake at 190°C (375°F) for about 20 minutes.
During the last few minutes of cooking the skewers, heat the red curry sauce over the stove. Serve the skewers with rice, red curry sauce, or, if you prefer, soy sauce.
