Ready in 30 minutes | Serves 2
Lunch break or work break? Red rice on a bed of mushrooms, pumpkin, and crispy pancetta is a quick and simple dish, perfect for both adults and children. You can prepare it the evening before and it's delicious both hot and cold.
Ingredients
- 175g of Arnaboldi red rice with peas, leeks and marjoram
- 150g of mixed mushrooms
- 6 slices of smoked bacon
- 100 g of pumpkin
- qb of white wine
- a pinch of oregano
- salt to taste
- to taste pepper and turmeric powder
- 1 tablespoon sweet paprika
- qb extra virgin olive oil
Preparation
First, prepare the mushrooms: clean them thoroughly, removing any dirt from the stems. For the pumpkin, if you already have it cleaned and diced, simply cut it into square or rectangular slices.
Meanwhile, using a sharp knife, dice the pancetta. If you prefer, you can use pre-packaged pancetta cubes.
In a nonstick pan, drizzle a little extra virgin olive oil, add the pumpkin, and mushrooms. Sauté for a couple of minutes, then add the wine, then add the oregano, salt, pepper, turmeric, and a tablespoon of sweet paprika. Cook all the ingredients for about ten minutes over low heat.
Proceed with cooking the Arnaboldi rice with peas, leeks, and marjoram . Pour 700 ml of cold water into a nonstick saucepan and add the contents of the sachet. Bring to a boil, then simmer for 16-18 minutes over low heat, stirring occasionally. Drain the rice, transfer it to the pan with the previously cooked sauce, and sauté for a couple of minutes. Serve and set aside.
In a pan, drizzle with extra virgin olive oil and sauté the diced pancetta until very crispy. Add the crispy pancetta to your rice and enjoy!
