Red rice with vegetables and salmon bites is a healthy and light recipe, perfect for when you're looking for a well-balanced and delicious one-pot meal.

Start by preparing the Arnaboldi red rice and vegetable soup . Pour 700 ml of cold water into a nonstick saucepan and add the contents of the sachet. Bring to a boil, then simmer for 14 minutes over low heat, stirring occasionally. Once cooked, drain the excess water from the rice using a colander. Transfer the rice to a large bowl, add a tablespoon of extra virgin olive oil, and stir. Let cool to room temperature.

Meanwhile, cut the salmon fillet into bite-sized pieces. Transfer them to a plate and season with the juice of one lemon, a tablespoon of oil, salt, and pepper. Marinate for 30 minutes in the refrigerator.

Coat the salmon pieces in sesame seeds, heat a little oil in a pan, and cook for a few minutes. Add the salmon pieces to the rice and serve!
