Vegetarian Pad Thai

Ready in 30 minutes | Serves 2

We're stopping in Thailand with this traditional vegetarian recipe. Pad Thai is one of the staples of Asian cuisine and is known for its exotic flavor and spicy aromas. The hint of lime makes it truly delicious.

Ingredients

  • 1 pack of Arnaboldi Pad Thai sauce with tomato and tamarind juice
  • 120g of rice noodles
  • 100g of natural tofu
  • 1 shallot
  • 1 spring onion
  • 1 carrot
  • juice of 1/2 lime
  • 100g mushrooms
  • 50 g of soy sprouts
  • 50 g of cabbage
  • 1 cm fresh ginger
  • toasted sesame oil to taste
  • vegetable broth to taste

Serve with

  • soy sauce
  • chili pepper (or paprika)
  • chopped peanuts
  • a few slices of lime
  • soy sprouts

Preparation

Cut the shallot, spring onion, and cabbage into thin strips; cut the carrots and mushrooms into 3-cm-long strips; and cube the tofu.

Place the rice noodles in a bowl and pour boiling water over them until they're covered. They'll be tender in about 5-6 minutes; drain and set aside.

Now you can cook the Pad Thai: place a wok (or a saucepan) on the stove, add the sesame oil and shallots, and cook for about 2 minutes. Add the Arnaboldi Pad Thai sauce with tomato and tamarind juice and bring to a boil.

Add the carrots and tofu and let them cook. Once the carrots are soft, add the mushrooms and a little grated ginger directly to the pan. Add the cabbage, spring onion, and the juice of half a lime. Add the rice noodles, 1 ladle of vegetable broth, and the bean sprouts: stir vigorously to combine all the ingredients (add a little more broth if necessary).

Your vegetarian Pad Thai is ready!

Chef's advice
You can enhance the dish to make it even tastier. We recommend following the original recipe, adding chopped peanuts, soy sauce, lime, bean sprouts, chili pepper, or paprika.
