Noodles in artichoke soup

Ready in 40 minutes | Serves two

How many of us love noodles, but think it’s difficult to make a tasty “broth”?
In this recipe, we reveal the simplest way to make an excellent artichoke soup, enriched with authentic Thai noodles.

Ingredients

  • 2 blocks of Arnaboldi instant noodles
  • 2 artichokes (including stem)
  • 3 tablespoons of extra virgin olive oil
  • salt and black pepper to taste
  • 1 lemon

Preparation

Clean the artichokes and rub your hands with lemon to prevent the substances inside from blackening your hands. Remove the tip, cutting off about 2-3 cm (this part, besides containing the thorns, is the toughest), then remove the outer leaves.
Once you reach the heart of the artichoke, clean the stem, removing the final part, which in this case is also the hardest, then with a small knife remove the fibrous outer layer.

Divide the artichoke and remove the fuzz with a small knife, cutting along the entire bottom of the artichoke. Cut the artichoke into at least 8 pieces and soak them in water for about 15 minutes, then rinse.

Pour two liters of water, salt, black pepper, two tablespoons of extra virgin olive oil, and the artichokes into a pot. Cook for about 20 minutes, then add the Arnaboldi instant noodles and cook for the time indicated on the packet.

Serve your noodles in artichoke soup piping hot!

(For an even richer dish, add some tasty grated cheese.)
