Noodles with clams and vegetables

Ready in 25 minutes | Serves 4

Ring in the new year with the right spirit! Try this simple recipe and bring an original Asian dish to the table: noodles with clams and vegetables!

Ingredients

  • 1 pack of Arnaboldi instant noodles
  • 3 medium courgettes
  • 15 datterini tomatoes
  • 1 jar of shelled and pre-cooked clams
  • 1 cup of white wine
  • A few basil leaves
  • Chopped to taste
  • Salt to taste

Preparation

In a nonstick pan, pour a drizzle of extra virgin olive oil and brown the chopped vegetables, then sauté the diced zucchini and the cherry tomatoes cut into wedges. Cook everything over medium heat for 5 minutes so that the tomatoes release their juices.

At this point add the clams, season with salt and deglaze with white wine.

Bring a pot of water to a boil, add the Arnaboldi instant noodles , and cook for 2-3 minutes. Remove from the heat, drain, and rinse under cold water.

Pour the noodles into the pan and stir in a little extra virgin olive oil.
