A tasty vegetarian rice salad, enriched with eggs, vegetables, aromatic herbs, aged cheeses and his majesty stracchino!
Ingredients
- 1 pack of Arnaboldi brown rice with lentil and rosemary fantasy
- 2 eggs
- 50 g of stracchino cheese
- 100 g of green beans
- 50 g of grated pecorino cheese
- 30 g of parmesan flakes
- 1 lemon
- basil
- fresh parsley
- oil, salt, pepper
Preparation
Finely chop the parsley using a mezzaluna. Beat the eggs with the pecorino, salt, and pepper, add the stracchino, and blend everything with an immersion blender until smooth. Add the chopped parsley and blend for a few more seconds: the mixture will be almost green. Heat the oil in a frying pan and cook the frittata thoroughly on both sides. Once cooked, transfer it to a plate and let it cool. Then, cut the frittata into small cubes .
Proceed with cooking the brown rice with Arnaboldi lentils and rosemary . Pour 700 ml of cold water into a nonstick saucepan and add the contents of the sachet. Bring to a boil, then simmer for 16-18 minutes over low heat, stirring occasionally.
While the rice is cooking, bring a small pot of salted water to a boil and cook the green beans, diced into small pieces, for a few minutes: they should remain crunchy. Drain and let them dry. Finely chop the basil leaves and toss them in a glass with enough olive oil to season.
Now you're ready to assemble! Add the omelette and green beans to the rice, season with basil oil and lemon juice. Finish with the parmesan shavings , mix well but without damaging the ingredients, and finally, season with salt and pepper if necessary.
Chef's advice
The brown rice salad with stracchino cheese frittata, green beans, and parmesan can be stored for several days. Once ready, place it in an airtight container and refrigerate.
