Ready in 45 minutes | Serves 4
This recipe will introduce you to a delicious and fragrant dish: cauliflower with curry and coconut milk. A tasty and healthy alternative, quick and easy to prepare. Perfect for a light meal or as a tasty side dish to accompany your main courses.
Ingredients
- 200 ml of Arnaboldi coconut milk
- 600 g of cauliflower
- 1 onion
- 1 chili pepper
- 1 teaspoon curry
- salt to taste
- qb extra virgin olive oil
Preparation
Wash the cauliflower, separate the various florets and cut the core into small pieces.
Bring a large pot of water to a boil, add a pinch of salt, and cook the cauliflower for about 5 minutes. Drain and set aside.
Peel the onion, cut it into thin slices and put it in a pan to stew for about 10 minutes with olive oil, then add the cauliflower.
Add a teaspoon of curry and the Arnaboldi coconut milk , season with salt and cook over a medium heat for 10-15 minutes.
Check occasionally that the liquid isn't too dry; if so, add some hot water.
Finally, add the chili pepper and continue cooking (do not touch the cauliflower more than necessary to avoid it becoming mush).
Your cauliflower curry with coconut milk is ready to serve.
