For our spring picnic, we chose dishes based on vegetables, legumes, and fruit, simple to prepare and very colorful... Because, as we know, the eye also wants its part!

Beetroot hummus on toasted bread slices

Ingredients (for eight people)
- 400 g of pre-cooked beetroot
- 230g cooked chickpeas (or 1 can of drained chickpeas)
- 2 tablespoons tahini sauce
- 1 lemon
- 1 pinch of salt
- 1 teaspoon cumin
- extra virgin olive oil
Preparation
Making beet hummus is very quick and easy. Place the ingredients in your food processor: chickpeas, beets, tahini, salt, lemon juice, and cumin. Blend until smooth, adding a little oil or water if necessary to loosen the mixture.
Once the cream is ready, you can serve it spread on croutons or on slices of previously toasted sandwich bread.
For those who prefer the more traditional version of hummus , you can follow this recipe without adding the beets.
Storage tips : Hummus can be stored in the refrigerator for up to three days, stored in an airtight container.
Red rice salad with feta, olives, and sun-dried tomatoes
Ingredients (for two people)
- Arnaboldi Brown Rice with Peas, Leeks, and Marjoram
- 100 g of feta
- pitted olives
- dried tomatoes
- fresh oregano
- extra virgin olive oil
Preparation
Start by cooking the Arnaboldi brown rice with peas, leeks, and marjoram. Pour 700 ml of cold water into a nonstick saucepan and add the contents of the sachet. Bring to a boil, then simmer for 16-18 minutes over low heat, stirring occasionally.
Let the red rice cool while you prepare the dressing. Dice the feta and slice the sun-dried tomatoes. In a bowl, combine the feta, sun-dried tomatoes, olives, and 3 tablespoons of extra virgin olive oil. Stir gently to avoid breaking the feta cubes.
In a salad bowl, combine the red rice, feta, olives and sun-dried tomatoes and the extra virgin olive oil emulsion.
For a wow factor , serve the rice salad in glass jars. Your guests will love it!
Yogurt and kiwi glasses

Ingredients (for two people)
- 300 g of plain yogurt
- 80 g of muesli
- 200 g of kiwi
- Honey to taste
Preparation
This yogurt and kiwi glass is a simple dessert, perfect for children's snacks, and can be customized with your favorite fruit.
To prepare the fruit, start with the peeled and finely sliced fruit. In a glass or jar, alternate layers of yogurt, sliced fruit, granola, and honey.
For an even more delicious result , complete with some grated dark chocolate on the surface.
